Easy sponge cake :D

So recently for my duke of Edinburgh award i've been doing a ton of cooking (about 3 months of it), and this week I decided to bake a cake. I have a pretty simple recipe that i found on the internet once in a blue moon and i'm just going to share it. Here goes..
ingredients:
(if you want to make a small-ish cake)
100g self raising flour
100g butter (it can be salted or unsalted, but personally i prefer salted)
100g caster sugar (or confectioners sugar)
2 eggs

Method
1. preheat oven to 180degrees C gas mark 4
2. cut the butter into little cubes. You need to do this to make sure it mixes well. Mix the butter cubes and  the caster sugar together (preferably using a hand mixer) until it becomes soft and fluffy. If it keeps spraying everywhere just be patient and keep squishing the butter.
3. crack the 2 eggs into a bowl and whisk. add this to your sugar and butter mixture and mix thoroughly.
4. sieve the self-raising flour and sieve it. add little amounts of it to the mixture and mix really well.
5. after you've mixed in the flour well, keep mixing for about 5 minutes (usually i turn on the oven at this point) (just to make sure all the ingredients are mixed)
6. bake until golden brown and until fork comes out clean
7. if you want to cover it in icing, mix together icing sugar and water until it makes a thin watery paste, and spread over cake

and thats it :D i find this recipe really easy and you can use it for cupcakes too- just halve all the ingredients. hope you enjoyed
